Salsa! Homemade style!

After seeing this post on homemade salsa and talking to some neighbors about their homemade salsa, I wanted some! I loved the little salsa kit from the farmer's market they show. Possibly a gift for someone in the near future?

So when Marla left us a big bag of peppers and we invited guests over last weekend, I thought it'd be a great opportunity to try it out.

Here is the recipe our neighbors use, but we improvised a bit because we didn't have the exact recipe yet.

- 2 cups chopped tomatoes
- 1 cup water
- 1/2 tsp pepper
- 1/2 tsp salt
- 1 tbsp lime juice
- 1 tbsp red wine vinegar
- 1 tsp Tabasco sauce
- 1/3 cup chopped cilantro
- jalapeno pepper
- 1 pablano pepper
- 1/2 tsp cumin
- 1 tbsp garlic
- 1 small or 1/2 of a large onion chopped
- 1 tbsp olive oil

You toast the cumin until it starts to smoke a little. Then add onion, garlic and oil and saute for two minutes. Add everything else but the jalapeno and pablano peppers and simmer for 10 minutes. Chop and cook the peppers until tender and simmer for another five minutes. Mix together and put in blender to make smooth (or leave chunky).

The deliciousness

Our recipe was a bit more simple:
- Leftover cherry tomatoes
- Two large tomatoes
- Two jalapeno pepper
- One pablano pepper
- Two limes
- A bit of chopped onion
- Salt
- Chili powder

The best part of the experience was I made the salsa up without the salt and chili powder. Kody comes along, notices that it needs a little zing, glances through our spice rack, pulls out a few things, dumps a little in and waa-la, we have bonafide salsa! I love how he just always knows what will make a recipe perfect!
