I saw Nastia!!

My mom came into town this weekend and we spent Saturday at the TYSON AMERICAN CUP! It may have been the highlight of my year ... I saw Nastia!! I didn't just SEE her either ... I walked RIGHT BY her and could have TOUCHED HER if I had reached my hand out!! Sadly though, I didn't even recognize her until my mom said "Katie, is that her!?! Is that her!?!?" No picture or autograph by Nastia for me to take home, but I did watch her every move during the meet. I promise, I'm not creepy. I just might wish that I could be her friend, haha. I think we would make good friends :-)

Awards ceremony!

My mom and I were one of the die-hard fans at the meet - we arrived before the doors even opened (and stood out in the freezing cold for 20 minutes) and stayed until after the awards were over!

Other exciting Olympians that we saw were Kerri Strug (she walked right in front of us, just like Nastia did!), Mary Lou Retton, John Macready, Blaine Wilson, Bridget and Jordyn, Martha Karolyi and Chellsie Memmel.

Happy first married Valentine's Day!!

On Saturday, Kod and I went on our first "real date" we've taken in a long time! However, considering we get to spend every night hanging out together, every day seems like a date compared to nine months ago!

Highlights include:
- Being surprised on Friday night with beautiful red tulips, chocolate and a sweet card!


- Breakfast in bed! Scrambled eggs (Kody's favorite), cinnamon rolls (unfortunately, not homemade), grapes and orange juice


- A trip to the Office Depot store closing sale to grab the last TomTom GPS at a great price! I don't like buying things without a reason, so we decided it was our Valentine's Day gift to each other.
- Driving up to Orland Park and going to a movie! We've rented about a thousand movies in the last couple months, but I can't remember the last one we've been to at the theater! We had (and still have!) an AMC gift card, so we splurged! Confessions of a Shopaholic was only complete with a large popcorn, Reese's Pieces, a large blue raspberry icee and a medium Coca-cola icee. And no, I did not have to do any convincing or guilt-tripping to get Kody to say okay to the Shopaholic movie! Isn't he wonderful :-) By the way, this PG movie, wasn't as innocent as it was advertised. Viewers beware. P.S. we couldn't buy tickets ahead of time, so we arrived at the movie 45 minutes early in case it was sold out on Valentine's Day (gotta be careful, you know). Well, it wasn't sold out. We sat for about 30 minutes outside the theater and were the second people in. We did get the best seats in the house though!

- Going to the Carson's in Orland to have Kody's coat tailored for "free," only to find out it isn't free and will cost us another trip up to Orland! A little frustrating, but not the end of the world.
- Dinner at Chilis! I worked at Chilis one summer and have to admit, it is probably one of my favorite restaurants. We called ahead, didn't have too long of a wait and enjoyed delicious food and a molton chocolate cake to top off the evening - all for free because of a gift card!

Because I haven't blogged in a long time...

So there's this thing going around Facebook where everyone writes 25 things. I succumbed to the fad and decided to post a modified version on here because I haven't blogged in a while and I'm not sure what I'll blog about in the next few days. So here goes. (I wrote all this before the pork blog).

Some things you may or may not know or want to know about me:

1. Whenever it's really windy and I'm walking into the wind, my mind takes me back to my track days and running the 400 hurdles with the awful last 100 being into the wind - miserable!
2. When I was a kid, I collected candy wrappers with another friend and we were going to take them to a recycling place to get money. At some point I was told I couldn't get money for them (still not sure if that's true or not), but I couldn't throw them away, so they stayed in a pink bag in my closet until probably sometime in high school, when I finally got rid of them.
3. I always think fads are silly at first (like gouchos, Dr. Martins, 3/4 length sleeves, capris, Ugg boots, Beanie Babies, etc.) and then I always give in right before these things go out of style. Thankfully, a few of them have stayed in style.
4. I went to college to become a journalist and now, after four years of school, I know that I don't want to work for a newspaper again. But I still do love the idea of journalism!
5. I have three brothers (two older and one younger) who live in Minnesota, California and Omaha, NE and I love them dearly even though boys are not very good at keeping in touch.
6. My favorite meal is a medium steak with gooey bread (family recipe), twice baked potatoes, fruit salad and Cara's pasta salad (family recipe).
7. I've never had a hobby before because I've never had time for one, but now I do! I love reading blogs about being frugal, couponing, meal planning and sweet deals. I read the blogs all week long and then spend my Sunday afternoons clipping coupons, planning the week's meals and making a grocery list. And I love it!
8. l love my husband much more than I could ever express to him and I always look forward to the end of my work day when I can go home to him again.
9. I've been told I grew up in a cave because I know nothing about classic (or current) movies, music or celebrities. But when work gets slow, I begun a bad habit of checking People and Us online for the latest celebrity gossip.
10. I have 15 amazing friends from Omaha that I have been friends with since middle school. Some of them I've known since elementary school! We've all moved across the nation and have grown up and changed so much, but when we get back together it's like we're in high school again.
11. Kody and I beat my family in our first Fantasy Football tournament this year. Kody got first and I took second. While I am, and always will be, a Cornhusker fan at heart, I knew nothing about professional football, but now I do!
12. I don't know how I survived my sophomore year of college. I was a resident assistant on a floor of freshman girls, staying up until 2 a.m. every night, taking 18 credits, being an editor of our school paper and running track all year. I thought everyone was always tired and fell asleep in class. To me it was normal to take a 3-5 minute nap on the floor of my room during the 10 minute break in between classes.
13. I did gymnastics for over 10 years and I so very badly wish my body looked the same as it did back then and that it would do the same things it did back then. While I've promised to not force my future daughter(s) to take gymnastics, I think my mom and I may cry for a few days straight if they don't like it.
14. I only drink skim milk, but Kody likes 2% the best, so we almost always have two gallons of milk in our fridge.
15. I was asked if I was old enough to sit in the emergency exit row when Kody and I were flying home from our honeymoon. The minimum age requirement is, I believe, 14.
16. I love smoothies and always have a yogurt with granola for breakfast.
17. Kody and I's wedding day was, by far, the happiest day of my life. I look back on it and, even though a few things did go wrong, I couldn't have cared less because I was sky high in my happiness.
18. After I quit gymnastics in high school, I decided to go out for the track team, even though I'd never ran in my life. I decided I'd try to be a thrower because I didn't want to run, but when people laughed at that idea, I switched to hurdles.
19. I can't wait to have a family, buy a house and a dog and get settled into a community, but I am loving this time in my life where my husband and I virtually have no cares in the world except hanging out with each other at night. But when I get anxious, I listen to "You're gonna miss this" by Trace Adkins and remind myself that I really will miss this stage of life and it'll be gone before I can blink.
20. I love looking at my planner and scheduling things in it. It keeps me organized. I'm also strange because I love announcements (like at school) and don't really mind the village board meetings I have to go to for work.
21. I normally do well when people tell me that I look like I'm 16 or still in high school, but sometimes it REALLY gets to me and I officially don't like that person from there on out. Normally though, these people are strangers, so I don't feel as bad for not liking them.
22. I never wanted to cook before I got married, but now I love it because I have the time, kitchen, ingredients and recipes for it! And a man to eat my cooking too.
23. Kody and I were both born in Dallas, TX at nearby hospitals and we both really wanted to go to Wheaton College, but we ended up running track together at Olivet. Isn't it crazy how God's plans always work out?
24. I love my ONU friends to death and they have challenged me so much in my faith by just the way they lives their daily lives.
25. I appreciate everything my parents have done for Kody and I and my brothers so much and I know I don't tell them that enough. It's neat to look back and see how our relationship has changed over the years.

I wish I were having this meal tonight

For some reason, I haven't been doing very much interesting cooking lately, but this week I had fun trying some new recipes in a cookbook Kody's parents gave us for Christmas! It's a "cooking around the world" sort of thing, with recipes from people who live in Puerto Rico, but come from all over the world.

I decided to try out the Asian Orange Pork Chops for a copule of reasons.
1. I have had a package of pork chops sitting in my freezer that I have basically been wanting to get rid of, unfortunately.
2. We had all the ingredients and they were pretty typical ones.
3. It sounded good!
4. It looked easy!


So here are the pork chops. I can't even remember when I got them, but they have been sitting like this, with the bag open, in my freezer for many months now. Apparently I didn't like them very much when I used them the first time (they have gross bones in them and what looked like a lot of fat to me) because I didn't bother to find another bag or container to put these in when my ziplock bag wouldn't close. So they've sat like this, open to the air. I did to always keep a roast on top of the open part of the bag in hopes of letting less air in!


Cooking up the pork! I probably cut off about as much meat/bone/fat/grossness as I kept.


Then I made a really good sauce in the same pan.

Grade: ehh, probably a B, although right now, on a Friday night when I have nothing planned for dinner, they look great!
Considering the freezer-burnt pork, the fact that neither Kody or I was feeling good that night and I couldn't really taste anything anyway, I think I'm going to try this recipe again in the future. I think the problem was more the state of the pork and the state of the Carrs than the state of the recipe. Probably serve it over rice with some broccoli and good BONELESS pork chops.

Happy Groundhog's Day!

This came to the office yesterday:


Yum!! The ladies in the office and I were wishing for some chocolate and this just walked in to help us celebrate Groundhog's Day! Huh?? I don't know either, but I wasn't going to say no to it! Unfortunately it's become my lunch since we got it. I promise I'll eat healthy sometime later. :-)

Today we wished for some sub sandwiches, but alas, those didn't walk through our office doors. I guess there's always tomorrow.
