I made some a while ago and really enjoyed freezing them, grabbing one to bring to work, letting it defrost and enjoying for lunch. I've just been missing some muffins.
So, when we were blessed to acquire a huge bag of frozen (fresh picked, mind you) blueberries from some wonderful friends at Olivet, I knew I needed some blueberry muffins.
The last muffins I made were relatively unhealthy. But these are packed with the good stuff. Here's the recipe I used, courtesy of newly married Liz Kramer.
But before the recipe, a short interlude to commemorate Liz's wedding in Ohio last August. It was awesome to see all my close Olivet friends again and spend some quality time with them celebrating Liz and Jordan's wedding!

And now back to Liz's muffins:
1 1/2 cup whole wheat flour
3/4 cup lightly packed brown sugar
1/2 cup quick oats
1/4 cup wheat germ
1 tsp. baking powder
1 tsp. baking soda
Dash of salt
1 cup fresh or thawed blueberries (or whatever fruit you want)
1 apple, finely chopped
1 mashed banana
1 cup buttermilk
1 egg
1 TBS vegetable oil
1 tsp. vanilla
Preheat oven to 350F. Line a 12-cup muffin pan with paper muffin cups. In a large bowl, combine flour, brown sugar, oats, baking powder, baking soda, wheat germ, and salt. Add blueberries and apple. In a medium bowl, mix the banana, buttermilk, egg, oil, and vanilla.
Pour medium bowl ingredients into large bowl of dry ingredients and mix until blended. Pour into muffin cups, filling them to the top. Bake 15 to 18 minutes.

I made a raspberry, blueberry, raspberry-blueberry and chocolate chip and ohh are they good! Although, Kody tried one last night and didn't finish it. He put his half eaten muffin back in the bag. Maybe muffins are just a girl thing.
